Ingredients

  • 3 slices bacon, diced
  • 1⁄4 cup green onion, chopped
  • 1⁄3 cup red bell pepper, diced
  • 1⁄4 cup green peas
  • 1 egg, beaten
  • 4 cups cooked rice, cold
  • 2 tablespoons soy sauce

Directions

  • Cook bacon in wok until crisp.
  • Add green onions, red peppers and peas stir fry 1 minute.
  • Add egg and scramble.
  • Stir in rice and cook until heated, gently separating grains.
  • Add soy sauce; cook until heated through. Serve immediately.
